Let me tell you if you all don’t already know that banana bread recipe is the most searched recipe on the internet. I am no baker but there are a few things I like to bake and banana bread is one of them. Ever since I had kids one fruit that’s almost always available in my house is a banana, now most of the times its gone within a few days but other times its just sitting on the counter top getting ripper and darker by the minute. In that case I peel it, cut it and freeze it in ziplock bags for smoothies, but as soon as fall is around the corner I start using it to make banana bread. There is something about fall that makes me want to bake all sorts of desserts and casseroles. One thing my girls really enjoy is banana bread, so I like to either bake it in a loaf pan or I make it into mini muffins. This way they can take it to school or quickly eat it for breakfast with a glass of milk.

Lately I started thinking of ways of how I can add more nutritional value to the classic.

I started researching recipes and nut butters really seemed to fit the recipe. The solution was that by cutting the butter in half I can add peanut butter to the recipe and add a depth of flavor along with a little more nutrition.

I don’t use white sugar in this recipe because I find that brown sugar is a little more forgiving then white sugar and it gives the bread a lovely rich color.

Chocolate chips and walnuts add excitement for the kids, and for the picky eaters a little treat.

You may also add 2 tablespoons of ground flaxseeds to the recipe and substitute whole wheat flour if you are looking for something more wholesome.

Ingredients

  • 14 cup peanut butter

  • 12 cup butter softened

  • cup mashed ripe bananas 2 large bananas

  • medium eggs room temp

  • tsp vanilla extract

  • tsp baking soda

  • 12 tsp baking powde

  • 12 cup flour

  • cup brown sugar

  • 14 cup chocolate chips

  • 14 cup chopped walnuts

  • 14 tsp cinammon

  • pinch of salt

Directions

  • Pre heat the oven at 350°
  • In a mixer cream the butters and the sugar.
  • Once the butter and sugar are well combined add the eggs, mashed bananas and vanilla extract.
  • Sift the dry ingredients.
  • Slowly incorporate the dry ingredients in the wet ingredients until the batter comes together nicely.
  • Roll the chocolate chips and the walnuts in flour and add them to the batter, fold them in gently with a spatula.
  • Transfer the banana bread in a greased and lined loaf pan and bake for 30 minutes at 350°.
  • Let it cool before serving.
  • Goes great with cold milk, Enjoy!!
