3 bean stew with ground beef and tomatoes

CHILI
Ingredients

  • 1 lb ground beef/turkey/chicken

  • 1 can red kidney beans (15.5 oz)

  • 1 can cannelloni beans (15.5 oz)

  • 1 can black beans (15.5 oz)

  • 1 large can of crushed tomatoes (28 oz)

  • 2 tsp salt

  • 2 tsp black pepper

  • 3 generous dashes wostershire sauce

  • 1 tsp crushed chili flakes

  • 1 tsp cayenne pepper (adjust according to taste)

  • 1.5 tsp paprika

  • 1.5 tsp roasted ground cumin powder

  • 2 tsp oregano

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1.5 tsp roasted ground coriander powder

  • 2 small onions finely chopped onion

  • 3-4 cloves chopped garlic

  • 2 small carrots finely chopped

  • 1/2 cup chopped bell peppers

  • 1 small deseeded and chopped jalapeño

  • 1 cup Water/chicken/beef stock as desired

  • 3 tbsp oil

  • Condiments
  • Chopped cilantro

  • Scallions

  • Lime/lemon wedges

  • Cheddar jack cheese

  • Jalapeño (optional)

  • Sour cream

  • Avocado

  • Tortilla chips or corn chips

Directions

  • In a pot heat oil and add ground beef, stir until the meat is brown.
  • To this add onion, garlic, bell peppers, carrots and jalapeño and cook until light golden and aromatic.
  • Add the worcestershire sauce and the seasonings. Cook the meat and aromatics with spices for a few minutes and than add the beans and the crushed tomatoes, stir well to combine. At this point please don’t forget to adjust the seasonings accordingly. Now add water or chicken/ beef stock to your desired consistency, let it simmer for 20 mins covered. You chili is now ready to serve.
  • Serve with your favorite condiments and enjoy!
