Power Three Bean Salad

I love beans, and I enjoy eating them in various ways but the best one so far has been in salads. I love pairing beans with fresh crunchy vegetables, the contrast between the soft smooth creaminess of beans with the freshness of crunchy bits is like a party in my mouth.

I came up with this recipe one lazy afternoon when I didn’t feel like cooking but wanted something to satisfy my hunger along with a power boost to get thru the rest of the day. I pulled out the canned beans from the pantry and all the fresh crunchy veggies I could find in my refrigerator, and wallah!! This recipe has stuck with me a while now, I especially love to serve it at parties alongside grilled meats. This light refreshing power salad can compliment any meal, and brighten up your palate with a flavor punch and an energy boost. Ingredients

  • 1/2 can garbanzo beans

  • 1/2 can red kidney beans

  • 1/2 can cannelloni beans

  • 1/2 can corn

  • 1/4 cup cucumber

  • 1/4 cup onion

  • 1/4 cup bell pepper

  • 1/4 cup tomatoes

  • 2 tbs parsley

  • 1 tbs dill (optional)

  • Salt to taste

  • 1/2 tsp pepper

  • 1/2 lemon

  • 1/4 tsp sugar

  • 3 tbs oil

  • Sprinkle paprika

  • Sprinkle cayenne

preparation

  • In a bowl combine half a can of each garbanzo beans, red kidney beans, cannelloni beans and corn. Combine the beans and corn with 1/4 cup of each cucumber, onion, bell pepper, tomatoes cubed. To this add a palmful of finely chopped parsley and dill. Combine the ingredients and set aside.
  • DRESSING
  • Dress the salad with oil, salt, black pepper, sugar, lemon juice and a sprinkle of paprika and cayanne pepper (optional).
