What is Sushi
Sushi unlike popular belief is not referred to raw fish, sushi is simply rice seasoned with vinegar rolled on seaweed and filled with ingredients of choice. Ingredients used to filled a sushi roll however, can be raw or cooked. Sashimi is specifically a raw preparation of sushi.
Sashimi is vinegared rice served with raw fish.
Most popular sushi roll in America which is readily available is California roll. It’s filled with imitation crab stick, avocado, carrots sticks and cucumber sticks. It’s available with or without sauces and sometimes the crab stick is shaved and tossed in sirach mayo to make the roll spicy.
Sushi Rice
Sushi rice is the most important component of the recipe. If not cooked correctly, the recipe is a fail. I have been making sushi rice in the instant for a few years now and it’s become one of my favorite things to make in the instant proof, its almost fool proof! The steps are pretty straightforward and it usually requires a little to no effort at all. All you have to do is measure the ingredients to the dot and toss everything in the instant pot and let it do it’s thing while you prepare the rest of the ingredients.
A few things to remember are:
– Wash the rice with cold water for around 2 minutes or until the water runs clear.
– Let it drain in the sieve in the sink for around 2 minutes as well.
– Cook on low pressure for 10 minutes, and let the pressure release naturally. The steam it sits in while the pressure releases itself is magic for the rice.
– When you remove it from the instant pot, use a glass, wood or plastic bowl. The vinegar solution, the starch, the steam will all react with metal if you use a metal bowl and your rice will have a metal taste.
Sushi (Maki) Rolls
If you enjoy eating sushi, you must know your favorite rolls by heart now! My favorite it definitely Dragon Roll. It usually filled with tempura shrimp, cream cheese, cucumber and avocado topped with unagi sauce and siracha mayo. I have also had different variation with spicy crab, masago (fish eggs) and eel. California roll needs no introduction, it’s the most common roll filled with imitation crab, carrot sticks, cucumber sticks and avocado. However, these two rolls are not where the sushi rolls end, there are tons more fillings you can use to make your rolls.

salmon (raw: sushi grade) or smoked
Tuna (raw: sushi grade) or canned
jalapeno
shrimp (tempura or cooked)
cucumber
avocado
carrots
imitation crab
lobster
eel
crab
sprouts
octopus
asparagus
mushrooms
masago (fish roe)
You can top your sushi with multiple toppings and sauces as well:
Japanese mayo
Siracha mayo
Sesame seeds
Tempura crunch
Fried Onions
Unagi sauce (kikoman)
Siracha sauce
Wasabi Mayo
Serving suggestions:
Side of soy sauce, wasabi and Japanese pickled ginger.
