Power Three Bean Salad

I love beans, and I enjoy eating them in various ways but the best one so far has been in salads. I love pairing beans with fresh crunchy vegetables, the contrast between the soft smooth creaminess of beans with the freshness of crunchy bits is like a party in my mouth.

I came up with this recipe one lazy afternoon when I didn’t feel like cooking but wanted something to satisfy my hunger along with a power boost to get thru the rest of the day. I pulled out the canned beans from the pantry and all the fresh crunchy veggies I could find in my refrigerator, and wallah!! This recipe has stuck with me a while now, I especially love to serve it at parties alongside grilled meats. This light refreshing power salad can compliment any meal, and brighten up your palate with a flavor punch and an energy boost. I hope you enjoy it as much as I do and make it a part of your diet regularly. Please try it, share it and leave your comments below to let me know if you enjoyed it!
