It’s mango season and what better way to enjoy mangoes other then refreshing mango lassi? I grew up in Pakistan with the world’s best mangoes and we had a mango tree in our yard as well!! So we enjoyed mangoes to the max. When I moved here 19 years ago, mangoes were not comparable to Pakistani mangoes to say the least, but the past few years the mangoes have gotten much better and if you get lucky they taste pretty close to the Pakistani mangoes as well. Also, I love the convenience of mango pulp here in the States, you can make delicious shakes, lassi, ice creams and smoothies even when mangoes are not available!! With just 5 ingredients you can have this refreshing, nutritious drink in your hand in a snap.
I like to use fresh mangoes whenever possible, or you can use frozen mangoes as well. You can also freeze fresh mangoes when they are about to go out of season. I do the same with leftover mango pulp. Freeze the mangoes and mango pulp in ziplock bags and blend a drink whenever you fancy!! Infact I love the frozen version just a tad more on a hot summer day!!
