Salads don’t have to be boring just because they are suppose to be healthy!! This wedge salad with blue cheese dressing and balsamic reduction drizzle is so delicious even a non salad eaters will not be able to resist. A salad  can be as elaborate or as ordinary as you make it. You can use any veggies of your and if blue cheese dressing or balsamic reduction is not available where you reside, you can use any white creamy dressing ( ranch, creamy Italian), you can use Parmesan cheese if blue cheese is not available (or you don’t like it) and you can use pomegranate molasses in place of balsamic reduction.

Blue cheese has an acquired taste and may not be everyone’s cup of tea, so feel free to skip it or replace it with your choice of dressing! This is a stunning salad and the flavor profile is next level if you are up for a challenge and try something new and bold!!  

Prepare everything in advance and assemble the salad right before serving!!

Ingredients

  • Head Iceberg lettuce

  • 14 Cup Purple cabbage Shredded

  • 14 Cup Cherry tomatoes Quartered

  • 14 Cup Cucumbers Diced

  • 5-6 Whole Black olives Sliced

  • 12 Cup Croutons

  • Blue cheese dressing as needed

  • Olive oil for drizzle

  • Balsamic reduction for drizzle

  • 18 Cup Blue cheese crumbles

  • Chives for garnish

  • Italian seasoning for sprinkle

Directions

  • Prepare veggies for the salad. Divide the iceberg lettuce in 4 quarters.
  • In a platter arrange the lettuce wedges. Start topping each wedge with cucumbers, purple cabbage, olives and cherry tomatoes.
  • Now lightly drizzle with olive oil, add the blue cheese dressing generously, then add the croutons, chives and the blue cheese crumbles.
  • Drizzle with balsamic reduction and sprinkle the Italian seasoning!
  • Enjoy!!
