A Cheeseburger Rooted in Nostalgia, Elevated with Technique

Some recipes are more than just food — they’re memories.

This smash cheeseburger is inspired by the classic burgers I grew up eating at Mr. Burger. Simple, comforting, and always wrapped in foil, those burgers were all about balance — soft buns, juicy beef, fresh toppings, and just enough sauce to bring everything together.

This version keeps that essence intact but elevates it using modern smash burger techniques.

Instead of adding complexity, we focus on doing the basics better — better sear, better layering, and better balance.

What Makes This Smash Cheeseburger So Good

1. Onion-Smashed Patties for Maximum Flavor

One of the key techniques in this recipe is cooking the beef directly over sliced sweet onions.

As the patty cooks, the onions soften and caramelize underneath, adding natural sweetness and depth of flavor directly into the meat. At the same time, the patty develops crispy, golden edges from direct contact with the pan.

This creates a burger that is rich, flavorful, and perfectly textured in every bite.

2. Thin Patties for Crispy Edges and Juiciness

Unlike thick burger patties, smash burgers are pressed thin to maximize surface area.

More contact with the pan means more caramelization, which means more flavor. The result is a patty that is juicy on the inside with irresistibly crispy edges on the outside.

This technique is what gives smash burgers their signature texture.

3. The Secret Sauce That Brings It All Together

A great burger sauce should complement, not overpower.

This simple combination of mayonnaise, ketchup, Dijon mustard, and relish creates a creamy, tangy, slightly sweet sauce that ties all the elements together.

Spread on both sides of the bun, it ensures that every bite is balanced and flavorful.

4. American Cheese for the Perfect Melt

For a classic cheeseburger experience, American cheese is the best choice.

It melts evenly and creates that smooth, creamy layer that blends seamlessly with the beef and onions. This is what gives the burger its signature texture and richness.

If you prefer, you can substitute with another yellow cheese like cheddar or Colby Jack, but American cheese delivers the most authentic result.

5. The Foil Wrap — A Simple but Important Step

Wrapping the burger in foil may seem like a small detail, but it makes a noticeable difference.

It allows the heat to gently steam the bun and meld all the layers together. The cheese softens further, the sauce settles, and the entire burger becomes cohesive.

This step enhances both texture and flavor.

Pro Tips for the Best Smash Cheeseburger

Use 80/20 ground beef for the best balance of flavor and juiciness

Do not overwork the meat when forming patties

Smash the patty once at the beginning and avoid pressing again

Cook on medium-high heat to achieve a deep crust

Toast the buns in the same pan for extra flavor

Wrap the burger briefly before serving for the best texture

Ingredients

  • 1 lb 1 ground beef (80/20 lean to fat ratio)

  • 1 1 red onion sliced

  • 1 large 1 beefsteak tomato sliced

  • 1 head 1 lettuce

  • 1 1 sweet white onion sliced

  • 2 2 jalapeños sliced

  • 1/2 cup 1/2 house special burger sauce

  • 5 slices 5 American cheese

  • 1 pack 1 gourmet potato buns

  • Salt to taste

  • Fresh cracked black pepper to taste

  • Grapeseed oil or neutral oil as needed

  • House Special Burger Sauce
  • 2 tbsp 2 relish

  • 1 tbsp 1 Dijon mustard

  • 2 tbsp 2 mayonnaise

  • 2 tbsp 2 ketchup

  • 1/4 tsp 1/4 salt

  • 1/4 tsp 1/4 black pepper

Directions

  • In a small bowl, combine relish, Dijon mustard, mayonnaise, ketchup, salt, and black pepper. Mix until smooth and fully incorporated and set aside.
  • Lightly season the sliced tomatoes, red onions, and jalapeños with salt and black pepper and set aside.
  • Divide the ground beef into approximately 3.2 oz portions and gently shape into loose balls without overworking the meat.
  • Place each portion between two sheets of wax paper and press into thin, even patties using a meat smasher.
  • Season one side of each patty with salt and freshly cracked black pepper.
  • Heat a cast iron skillet over medium-high heat and lightly drizzle with grapeseed oil. Toast the potato buns on both sides until golden brown and set aside.
  • In the same skillet, add a small amount of oil and spread sliced sweet onions across the surface. Place a beef patty directly over the onions with the seasoned side facing down and press firmly to ensure full contact with the pan.
  • While the patty cooks, season the top side with salt and freshly cracked black pepper.
  • Cook until the juices begin to surface and the edges become deeply browned and crisp.
  • Flip the patty, then top with sautéed jalapeños and a slice of American cheese.
  • Allow the cheese to melt completely, then remove from the skillet.
  • Spread the prepared sauce on both the top and bottom buns.
  • Place the patty on the bottom bun followed by a slice of tomato, a ring of red onion, and lettuce.
  • Close with the top bun and wrap tightly in foil.
  • Let rest briefly before serving warm.
